Eggs, Eggs, Eggs!

Eggs are such a fantastic breakfast staple. Packed with protein & healthy fats a single boiled egg contain Vitamin's A, B, D, E, K as well as phosphorus, calcium and zinc. Nice one!

I love simple boiled eggs with my Green Smoothy most mornings, but sometimes its nice to mix it up.

A filling, grain-free breaky, this is an example of using what I have in the fridge for a quick and easy, nourishing low FODMAP breakfast.



2 eggs
2 slices of ham (or bacon)
1 tomato
Handful of kale
Dried or fresh basil
1/2 tab butter
Cracked pepper


Preheat griller to 275c. Cut tomato in half and sprinkle diced fresh or dried basil and cracked pepper on top. Place under grill.

Bring water to boil in saucepan. Once boiling add eggs, set timer for 10min. (If using bacon cook now in fry pan until desired crisp is achieved).

When eggs have been boiling for about 8-9min add kale to a steamer above boiling eggs. Cover and steam for approx 1-2 mins. Remove kale and add butter, melt through kale.

Check tomatoes are warmed through and plate up. Serve next to eggs, ham and kale.
