My most favourite elements of cooking are in this dish; it's healthy, inexpensive and only takes around 30min to make.
The low FODMAP secret to this winner is the spring onion (or scallion). The unmistakable depth onion brings to a dish is often laking in low FODMAP dishes, but by using only the green part of the spring onion it becomes FODMAP friendly, and lets a mild but happily familiar onion flavour shine through.
I like to serve this with steamed bok choy drizzled in oyster sauce for a delicious Asian inspired dinner.
Serves 3-4
500g ground beef mince
100g sweet potato, peeled and finely diced into cubes
Handful of fresh parsley, finely chopped
1 spring onion (green part only), finely diced
1 Tab fish sauce
1 Tab sambal oelek* paste
Cracked pepper & salt
2 Tab coconut oil, melted
*You can substitute sambal oelek with 1 tab of tomato paste & 1/2 tsp chilli flakes
Preheat oven to 1800C. Finely dice sweet potato, spring onion and parsley. Combine in a mixing bowl with mince, fish sauce and sambal oelek paste.
Season well with salt and pepper and combine mixture together (using your hands works best for this).
Melt coconut oil and drizzle over lined baking tray. Create medium sized balls of the mince mixture in your hands and place on the baking tray (this mixture makes around 8 good size balls).
Cook in oven for 10min, then remove and turn each ball over, and replace for further 10min or until cooked through.
Note: these would be fabulous made into mini meatballs and served as finger food for a function or for a picnic.
