Orange & Ginger Pork {low FODMAP, GF}

A quick and easy week night dinner that really packs a flavour punch.  I'm not a huge pork lover but the orange ginger glaze makes these succulent chops to die for.  I've adapted the ingredients for the glaze to be sugar free and low FODMAP, and to be honest I think it tastes even better this way!





Serves 4

4 pork chops
2 tsp minced ginger
2 tabs soy sauce
1 tab dijon mustard 
1 tab garlic oil
2 tabs rice malt syrup
Juice of 2 oranges

Add garlic oil to frypan and brown pork chops, approx. 4 min on each side. Season with salt and pepper.

Meanwhile combine ginger, soy, dijon, garlic oil, rice malt syrup & orange juice in a bowl and mix until combined.

Once both sides have browned add syrup mixture making sure both sides are coated. Reduce heat and simmer for 5 min. Turn chops over and mix juice around, simmer for further 5 min.


Plate up the pork chops and drizzle any remaining syrup over them. Serve with creamy mash potatoes and leafy greens of your choice.
