BLT Rice Paper Rolls {GF, SF, low FODMAP}

Pre-packing a healthy, tasty lunch can be a challenge. Apart from the fact we're all time poor, having a generic salad everyday can get a lil on the snor side. And although sandwiches are super convenient, we all get enough wheat in our diet as it is.

Entre bacon. 

Bacon has to be one of my favourite things on the planet. It tastes so so good, while adding healthy fats to a meal it will fill you up and keep you going and going.

BLT (bacon, lettuce & tomato) sandwiches are delightful, so here is a healthy alternative that you can make pretty quickly in the morning and pack with you for lunch on the run.

BLT Rice Paper Rolls {GF, SF, low FODMAP}


Lunch for one:

1 rasher bacon
3 cos lettuce leaves
1/2 tomato
3 rice paper sheets


Making them is a fairly simple process.

Fry bacon in a hot pan to desired crispness, until cooked through on both sides. Slice bacon, tomato and lettuce into strips.

Making the rice paper rolls is a little fiddly, but after a few times you get the hang of it. Firstly fill a shallow bowl with hot water. Place the rice paper sheets in one at a time. Dip for a few seconds then place on a flat surface such a chopping board.

Fill the rice paper roll with the sliced bacon, tomato and lettuce. Fold the ends up first, then carefully wrap the sides over and roll tightly*. 

Serve immediately or refrigerate to enjoy later in the day.  

*Tip: if you tear a hole when rolling get another dampened sheet and wrap that over the whole roll. Two sheets won't make the roll that thick and it saves a lot of mucking around.
