Strawberry Coconut Rough {low FODMAP, SF, GF}

Here's a sweet treat for dessert that's packed with only good things!

Strawberries are currently in season here in Australia which means the prices are low and the flavours are high! So buy an extra punnet next time you're at the markets and give this a whirl.

It takes less then 5min to throw together and is one of those great desserts to make ahead of time, as it needs about an hour in the fridge to set.



Strawberry Coconut Rough 


Sugar free strawberry coconut roughs

Makes 7

3/4 cup shredded coconut*
1/4 cup coconut chips
1/2 cup almond or hazelnut meal
1/3 cup raw cacao
1/3 cup rice malt syrup
1/3 cup coconut oil, melted
1/2 cup strawberries, diced


The process for this couldn't be simpler.  The only actually effort you will need to do is to melt coconut oil to get a liquid consistency; and dice strawberries to nice small pieces, around 2cm in size.

Then all that's left to do is to mix all the ingredients in a bowl until well combined, spoon into patty cases, and refrigerate for about an hour. That's all!


Note: As you're using fresh strawberries here they don't tend to keep well, so best to make fresh and eat that day (though that doesn't tend to be a problem in my house!)

*when buying packaged coconut such as shredded or desiccated, make sure to flip the pack over and check the ingredients list as some companies add sugar, which is totally not needed. Just natural coconut is all you need.
