Healthy side dishes

When you're next looking to add flavour to your mid week meal ditch the pre-packaged sauces and dressings that have more additives then a chemical waste bin.

There's an easy way to add flavour and taste in a cinch.  No need for fancy recipes or ingredients, just a few simple additions of healthy fats and proteins to your vegetables will have you getting your vitamins and minerals in a pleasure to eat package.

Here's a simple one to try tonight that will be on the table in under 30min. Again this one here is low FODMAP, low carb, gluten free, lactose free, sugar free and vitamin high!


Pumpkin, Zucchini & Bacon Bake

Pumpkin, Zucchini & Bacon Bake


120g pumpkin, diced
1-2 zucchinis, grated
1 rash bacon, diced
Grated cheese to top

Serves 2

Preheat oven to 1800C.

Steam pumpkin for 5min to speed the cooking process.  While pumpkin is steaming, cooked diced bacon for a few minutes in a frypan, allowing it to crisp up and the beautiful flavours to seep out. 

Once lightly fried, place the diced bacon and pumpkin in baking tray and combine with grated zucchini.

Grate a nice bitey cheese such as a vintage chedder atop and bake in oven for 15-20min.  And that's it!

Serve as a side dish to your favourite meat such as a juicy steak, grilled chicken or even steamed fish.
